🔥 Recipe of the Week: “The Spicy Gurl” Cajun Shrimp & Spicy Rice Salad

🛒 Ingredients

For the Spicy Yellow Rice:

  • 1 cup yellow rice
  • 2 cups chicken broth or water
  • 1 tsp Cajun seasoning
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • 1 tbsp butter


For the Shrimp:

  • 1 lb large shrimp (peeled & deveined)
  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning
  • ½ tsp chili powder
  • ½ tsp garlic powder
  • Salt & pepper
  • Red pepper flakes
  • Juice of 1/2 lime


For the Salad:

  • Shredded lettuce
  • Diced tomatoes
  • 1 bell pepper (sliced)
  • 1 sliced red or yellow bell pepper 
  • ½ onion (sliced)
  • 1 cup broccoli florets
  • Juice of 1/2 lime 
  • sliced jalapeños optional (recommended)
  • sliced mushrooms optional (recommended)
  • Optional shredded cheese


CajIn Ranch Dressing: (from scratch version available in the cookbook)

  • ½ cup ranch dressing
  • 1 tsp Cajun seasoning
  • Splash of hot sauce
  • Squeeze of lime juice

👩🍳 Instructions

1. Cook the Rice

Prepare yellow rice according to package instructions.
Add Cajun seasoning, garlic powder, smoked paprika, and butter while cooking for extra flavor.


2. Season & Grill the Shrimp

Toss shrimp with olive oil and seasonings.
Grill or sauté for
2–3 minutes per side until perfectly cooked and slightly charred.


3. Sauté the Vegetables

In a skillet, sauté peppers, onions, and broccoli until tender but still vibrant.


4. Make the Cajun Ranch

Mix ranch dressing, Cajun seasoning, hot sauce, and lime juice until smooth.


5. Build the Salad

Layer:

  • Hot spicy yellow rice
  • Shredded lettuce
  • Tomatoes
  • Sautéed veggies
  • Grilled shrimp
  • lime
  • Optional cheese

Then drizzle generously with Cajun ranch dressing.
