For the Spicy Yellow Rice:
- 1 cup yellow rice
- 2 cups chicken broth or water

- Juice of 1/2 lime
For the Salad:

- Diced tomatoes
- 1 bell pepper (sliced)
- 1 sliced red or yellow bell pepper
- ½ onion (sliced)
- 1 cup broccoli florets
- Juice of 1/2 lime
- sliced jalapeños optional (recommended)
- sliced mushrooms optional (recommended)
- Optional shredded cheese
CajIn Ranch Dressing: (from scratch version available in the cookbook)
- ½ cup ranch dressing
- 1 tsp Cajun seasoning
- Splash of hot sauce
- Squeeze of lime juice
👩🍳 Instructions
1. Cook the Rice
Prepare yellow rice according to package instructions.
Add Cajun seasoning, garlic powder, smoked paprika, and butter while cooking for extra flavor.
2. Season & Grill the Shrimp
Toss shrimp with olive oil and seasonings.

3. Sauté the Vegetables

4. Make the Cajun Ranch
