For the Shrimp:


  • 1 lb large shrimp (peeled & deveined)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 tsp red pepper flakes
  • Juice of ½ lemon
  • Salt & pepper


For the Pasta:

  • 8 oz pasta (linguine or fettuccine)
  • 2 cups cherry tomatoes
  • 3 tbsp olive oil
  • 3 cloves garlic (minced)
  • ½ tsp chili flakes
  • ÂĽ cup parmesan cheese
  • Fresh basil (optional)

👩🍳 Instructions

 

  1. Roast the tomatoes:
    Toss tomatoes with olive oil, garlic, salt, and pepper. Roast at 400°F for 20–25 minutes until soft and slightly caramelized.
  2. Cook the pasta:
    Boil pasta until al dente. Reserve ½ cup pasta water.
  3. Grill the shrimp:
    Toss shrimp with olive oil, garlic, red pepper flakes, lemon juice, salt, and pepper.
    Grill (or pan-sear) for 2–3 minutes per side until pink and slightly charred.
  4. Build the sauce:
    In a pan, combine roasted tomatoes with chili flakes and a splash of pasta water.
  5. Bring it together:
    Add pasta, toss well, then top with grilled shrimp. Finish with parmesan and fresh basil.
